How to Brew
Signature Chai Mix
Learning to make good chai is part recipe, part instinct — and it gets better every time you do it. With each cup, you’ll start to recognize the little cues: the deepening color, the aroma in the air, the rise of the boil. Follow these steps to build your confidence, and if your first cup isn’t perfect, don’t worry — the Troubleshooting Guide at the end will help
Step-by-Step: Preparing 1 Cup of Our Chai
1. Start with water and chai mix.
Add ⅔ cup of water and 1 teaspoon of Our Chai Mix to a small saucepan.
Bring it to a steady boil over medium heat. As it brews, you’ll see the color turn from clear to a rich amber — and you’ll start to smell the warm spice notes coming through. These two cues — color and aroma — tell you the base is developing depth.
2. Let it boil for flavor.
Keep it boiling gently for about 3 minutes. This stage strengthens both flavor and color, so don’t rush it.
(If you prefer a bolder cup, extend this stage by another minute before adding milk — you’ll notice a deeper hue and stronger fragrance.)
3. Add the milk.
Pour in ½ cup of milk and stir gently. The chai should now look close to the color you want in your final cup.
If it looks too light, sprinkle in a small pinch of chai mix — as the milk boils, the color will darken and the flavor will round out.
If it looks too dark, you can lighten it with a splash more milk.
Bring the chai back to a full boil, cut the heat, let it settle, and then reignite the heat for a second boil. This “double boil” is what gives Our Chai its signature smoothness and texture.
4. Strain and sweeten.
Strain the chai into your cup using a fine mesh strainer.
Add sugar or sweetener to taste — about 1 teaspoon per cup is a good starting point.
5. Say Bismillah, and enjoy.
Your chai is ready.
Scaling Up or Down
To make more or less chai, simply multiply the ingredients while keeping the same proportions.
For 2 cups, double everything: 1⅓ cups water, 1 cup milk, 2 tsp chai mix.
For 4 cups, quadruple it, and so on.
Important tip:
Always add a little extra water and milk than your final serving size — some will evaporate while boiling. For example, if you want 2 cups of chai, start with about 2½ cups total liquid (combined water and milk) so you end up with 2 full cups after reduction.
You’ll find a quick ratio guide below if you’d like to experiment with your own variations.
Troubleshooting Guide:
Chai looks too light or watery:
Boil longer before adding milk, or use slightly less water next time.
Make sure the chai mix has fully infused — the color and aroma should deepen before milk goes in.
Chai tastes too strong or bitter:
You may have boiled it too long or used too much mix.
Next time, reduce the chai mix slightly or shorten the pre-milk boil.
Chai isn’t creamy enough:
Use a higher milk ratio (try ⅔ milk to ⅓ water).
Make sure the chai reaches a full rolling boil after adding milk — that’s what blends the flavors and builds creaminess.
Chai feels too heavy or rich:
Increase the water slightly, or shorten the milk-boil phase.
Lighter chai can also be achieved by using lower-fat milk.
Ratio Reference
Base ratio:
For every 1 teaspoon of Our Chai Mix, use about ⅔ cup water and ½ cup milk.
More milk = creamier and smoother.
More water = lighter and brisker.
Longer simmer = deeper color and bolder flavor.
